Discover the treats of Wild Food Foraging in this foraging course with Liz Knight of Forage Fine Foods. You'll start with a guided forage in the fields and along the hedgerows around the farm. Find delicious wild ingredients and bring them back to the barn to make into Liz's fantastic, seasonal recipes.

SPRING
There might be nothing in the veg patch at this time of year but there are plenty of new shoots and amazing flavours to discover in the fields and hedgerows. Learn how to tap and drink from Birch trees and make delicious puddings, preserves and syrups from leaves and buds like the Rowan or Bramble.

SUMMER
Early summer is the time for nectar filled flowers, green seeds and flower buds as well as the last of Spring's herby shooting greens. Later in the season you'll find Honeysuckle and Tarragon sorbet, Oxeye Daisy raita or salsa verde.

AUTUMN
Discover autumn treats, like crab apples and rosehips, cobnuts and orchard fruit. Make them into wonderful pickles, preserves, fruit butters, sweetmeats or even liqueurs.
